Toots and Poops

Sorry for the title, but as I am sitting here watching Scrubs my daughter is lying on the couch with her daddy ripping toots and making poops.

Pretty certain I started this post about 3 hours ago, they have now moved onto other activities. Chris just read "goodnight moon" to her and now onto a book called "my little miracle". And 5 minutes later, she's moved onto taking her evening bottle.

So I have this list at work that has "easy meals" on it- obviously it is of no good since I'm on leave. But I have a few "go-to" meals, here they are in no particular order.
  • tex mex ravioli,
  • mac 'n cheese + canned tomatoes + chopped up deli ham (sometimes I add green veggies), it really is better than it sounds
  • chicken marinated in italian dressed, served with whatever is in the fridge or cupboard!
  • breakfast (turkey sausage gravy, biscuits, and eggs)

What about you, any fast "go to" meals worth sharing?

  1. Black Bean Quesadillas
Can of black beans, mashed up in food processor, add a bit of salsa and spread on tortillas, add shredded cheese, top with another tortilla and bake for 10 mins. Everyone in my house loves them!

  2. So easy...we love this crockpot meal,

Super yummy on a cool night...

Really easy and a family favorite at our house...

    Tastes soooo good...

And if Chris feels like grilling, this is soooo good...

  3. Sweet and Sour Chicken
    2Tbsp veg. oil
    2 1/2lbs boneless skinless chkn
    1 can(20oz) pineapple chunks
    1 can(8oz) water chestnuts, drained
1 med red bell pepper cut into chunks
    2Tbsp soy sauce
    1Tbsp white vinegar
    1Tbsp ketchup
    2Tbsp cornstarch
    2Tbsp sugar

Heat oil in large skillet over high heat. Add chicken and stir-fry for 4-5min.

Add pineapple chunks, water chestnuts, bell pepper. Stir-fry for 3-4min or until veggies are tender.

In a small bowl, combine reserved pineapple juice, soy sauce, vinegar, ketchup, cornstarch, and sugar. mix well. Stir into skillet anc cook for 3 minutes.

    Serve immediately.

It sounds like a lot of stuff but it is quick and DELICIOUS!! and you can play with it and add your own veggies and goodies.

I love hearing what you have to say:
